Wine, Pears, Alpaca's and a Mt. Hood Bed and Breakfast.

Breakfast or dessert, you decide.  This Pear Pudding recipe is one of my favorites and makes a perfect breakfast addition or a perfect ending to a perfect dinner.

Pear Pudding
2-15oz. cans pear halves in light syrup
1/3 c. all-purpose flour
1/4 c. granulated sugar
1/2 c. plain low-fat or fat free yogurt
2 eggs
1 tsp. vanilla
3 Tbsp. brown sugar

Preheat oven to 375 degrees.  Drain pear halves, reserving 3/4 c. syrup.  Lay pears flat side down in a shallow greased casserole dish and score pear halves with shallow crosswise cuts. 

Pears near Oregon Bed & BreakfastIn a bowl, blender or food processor, place flour and granulated sugar.  Cover and blend or process until combined.  (This prevents flour from clumping.)  Add yogurt, eggs, vanilla, and the reserved pear syrup.  Cover and process until smooth.

Pour batter over fruit.  Sprinkle with brown sugar.  Bake for 25 to 30 minutes or until center is just set when gently shaken.  Cool on wire rack for about 30 minutes. 

Serve warm and it makes about 6 servings.

I started making this pear recipe several years ago and found that it was a very easy way to get ooh's and awe's from our guests.  Here at The Pfeiffer Cottage Inn, we bake it in a quiche dish and serve it with "shirred" eggs, whole grain toast with butter and orange marmalade, and maple sausage.
